Thinking About Melodyne Editor

I currently have Melodyne Assistant which does well for my vocal work. I recently discovered the joy of using the Audio-to-MIDI feature of Studio One. I have just discovered and old USB drive containing some some old projects going back about 10 to 15 years that have audio WAV files where I was using a cheap Yamaha keyboard piano sound. The wavs sound OK but cheap and dated. I would like to be able to have those cheap Yamaha piano sounds converted to a better piano sound through a MIDI plugin program I have (Toontrack EZ Keys 2). Melodyne Assistant only converts single notes and not polyphonics. Editor, I understand, will convert polyphonic chords. Would upgrading from Assistant to Editor accomplish what I'm looking to do?

You guys are so well versed on the different Melodyne versions and the Audio-to-MIDI feature. Thanks so much for your help.
