I can't seem to find a way to mark a custom <track preset> with the "Favorites" notation [*].

Yes. A concept for user tagging and a favorites feature for presets and other content in the Loop tab was developed by me several years ago and discussed with PreSonus/Fender during one of our feature planning meetings. However, it has not yet been implemented in the application.
