Am I right in saying that if I am having no latency issues at all on my Mac, then I should set 'Dropout Protection' to 'off'?
Any advantage in having it on?

If you have no issues then go with the defaults. If you have issues then change the defaults to make them go away. My $0.02
NB. Latency presents itself as a delay; Dropouts present themselves as clicks and pops. So that's two completely different problems. Extremely low latency settings may lead to dropouts. Dropout protection, well, protects against dropouts a the cost of a slightly higher latency. But again, if neither problem presents itself then go with the settings you have.
Truth is, there is no 'right' answer to this. It's a balance game between performance (system stress) and latency (performer stress). Figure out a setting that works for you and live with that until it doesn't work for you and repeat the process...

Sorry, I should probably have said that I have Dropout Protection set to off and have no issues. I was wondering if there was any advantage in having some switched on, either from a recording or system point of view, maybe.
Is it better to aim low and gradually increase the level if issues are encountered? Kind of like the 'Device Block Size'?
Not sure if you took the right info away from that video. Low dropout protection means more stress to your computer during e.g. playback and export. If your computer is fine with such a setting then that's fine. But I wouldn't go as far as to say "keep it as low as possible". I'd rather think "Keep it at default unless it causes problems".
Thanks for that. I must admit that my gut-feeling policy has always been to not use processes just for the sake of it. If there is clearly a benefit to using something, then I will use it.
